Spicy schug recipe
Schug, zhug, or skhug is a spicy and popular hot sauce originating in Yemen and used widely throughout the middle east. It's great with felafel, organic barbequed or grilled meats, drizzled over roast vegetables or eggs. Add more chilli if you want more heat or balance with yoghurt when serving if you like it less hot.

Ingredients

  • 300 g red long chillis
  • 1 bunch of coriander
  • ½ bunch parsley
  • 1 tbsp lemon juce
  • 4 cloves of garlic
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • ¼ tsp paprika
  • 100 ml olive oil

Method

1.

Cut off the stems of the chillies.

2.

Blend all ingredients except olive oil together in a food processor.

3.

While blending, slowly pour in olive oil (take care not to over blend, you want to see specks of all the ingredients).

Store in an airtight container in the fridge. Your schug will last for about one week.
